Ingredients
- 1 Cup butter shopping list
- 2 ½ Cups all-purpose flour shopping list
- 1/3 Cup honey shopping list
- ¾ Cup Chopped pecans shopping list
- 1 tsp. vanilla shopping list
How to make it
- Honey Shortbread
- 1 Cup Butter 2 ½ Cups All-Purpose Flour
- 1/3 Cup Honey ¾ Cup Chopped Pecans
- 1 tsp. Vanilla
- Beat butter, honey and vanilla in large bowl with electric mixer until mixture is light and fluffy.
- Add flour, 1 cup at a time, beating well after each addition. If dough becomes too stiff to stir, knead in remaining flour by hand.
- Work in nuts.
- Pat dough into shortbread mold or ungreased 9-inch cast iron skillet.
- Score surface with knife so it can be divided into 24 wedges, prick deeply with fork into score marks.
- Bake in preheated 300F oven 35 to 40 minutes.
- Cool in pan on wire rack 10 minutes.
- Remove from pan.
- Cut into wedges while warm.

Was this review helpful? Yes FlagThis is an excellent recipe. Thank you! The results were nearly as good as my favorite (award winning!) shortbread, Bonnie Doons. I tweaked the recipe a little bit, but kept the ratios the same. I cut it in half and it still made a lot of cookies! I used raw honey and no nuts. I used tapioca starch for part of the flour (1/4 c. + 1/8 c. and the rest flour). For the flour, I used extra-fine flour. And I substituted 2 T of the butter for virgin coconut oil. Also, I added a pinch of sea salt. I sprinkled coconut flakes on half of the dough and then baked it in an enamel-coated iron baking dish at 300 for 40-45 minutes or so and then cut it and put it in the freezer. Once it was cool, I put it back in the oven at 450 for 5-10 minutes to give it some more color and then put it in the freezer to cool again.

This is a nice find for me. My husband eats no refined sugar. I cook a lot with honey and always on the look out for a good honey sweetened cookie for him. Thanks Mystic_rive! I've printed this one to use right away.
